Almost everyone loves pancakes, but when I saw someone buying 'instant pancake mix' I thought that maybe there were a few people who weren't quite sure how to make them!! This recipe is from Delia Smith and it really works for me - if you have an electric mixer, use it, but it's not an essential tool - even the fork would work :D If the finished product hadn't disappeared as fast as they were cooked I could have shown them on a plate! I'll have to make some more when no one is home.
