As a roastery, cupping is one of the most important steps on the path to crafting a great cup of coffee. When we are looking to buy coffee we roast small samples from different farms and cup them blind, evaluating each as per the SCAA guidelines and assessing where they might fit into our range. As we develop each individual roast profile, we continue to cup samples from every roast to help us check consistency and quality, ensuring we're always getting the best from every coffee we're working with. An invaluable tool, cupping is also a continuous learning process. The more you cup the more you begin to understand your palate, discerning different flavour notes and exploring further possibilities in terms of roast profile and brewing methods. To reflect this importance, Climpson's Cupping Club holds public cuppings every month, where you can come and develop your taste buds and really begin to decipher what you are experiencing in every coffee you try.
