Spicy cuttlefish salad * 7-10 cuttlefish * 1 tbsp kaffir lime leaves * 1 ½ tbsp chopped lemongrass * 1 tbsp Thai prik pao * ¼ tsp chicken powder (optional but for more deliciousness) * 1 tbsp. chopped garlic * Thai chili flake or fresh Thai chili to taste * 1 ½ tbsp. lime juice * 1 tbsp. fish sauce * 3 tbsp. cilantro * 3 tbsp. shallot or red onion * 2 tbsp. fried onion Preparation The first step is to soak and leave the cuttlefishes on limestone water for about 15 minutes, then rinse and wash them thoroughly. This process is essential to get real crispiness on the cuttlefish; otherwise, it will simply get gummy. On a pot with water, boil the soaked cuttlefish at high heat for about two minutes. Cut the cuttlefishes in small pieces according to your preference. Put on a bowl, and then add the kaffir leaves, lemongrass, Thai prik pao, chicken powder, chopped garlic, Thai chili flakes, lime juice, fish sauce, cilantro, shallot or red onion, and fried onion. Mix all the ingredients on the bowl until the cuttlefish if full colored and all the spices are mixed, then serve on a plate on top of a bed of vegetables of your preference, we recommend lettuce.
