Rich earthy flavour from a very simple cookie to make.<br /><br />¾ cup (175 mL) butter<br />1 cup (250 mL) sugar<br />¼ cup (50 mL) fancy molasses<br />1 egg<br />2 cups (500 mL) flour<br />2 tsp. (10 mL) baking soda<br />1 tsp. (5 mL) ground cinnamon<br />½ tsp. (2 mL) ground ginger<br />½ tsp. (2 mL) ground cloves<br /><br />Method:<br /><br />Pre-heat oven to 375ºF (190ºC)<br />Melt butter and cool. Combine with sugar, molasses and egg. Mix together the dry ingredients: flour, baking soda, and ground cloves. Add the dry to the wet and mix.<br />Chill dough for about 20 minutes.<br />scoop out dough and roll into balls then roll in sugar.<br />Place on a parchment lined baking sheet and bake for 8-10 minutes.<br />Cool on a rack.
