Apples and cinnamon in a cookie! Couldn’t be better.<br /><br />Makes about 6 dozen.<br /><br />Ingredients:<br />2 cups all purpose flour1 Tbsp ground cinnamon <br />1 tsp baking soda1/2 tsp salt1 cup softened butter1 cup packed brown sugar1 cup granulated sugar2 eggs1 tsp pure vanilla extract <br />2 cups quick-cooking oats1 cup chopped pecans1/2 cup chopped dried apples<br /><br />Method:<br /><br />Preheat oven to 350°F. <br />Cream butter and sugars in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well.<br />Mix flour, cinnamon, baking soda and salt in a bowl then set aside. Gradually beat flour mixture into butter / egg on low speed until well mixed. Stir in oats, pecans and apples.<br />Drop by rounded tablespoons onto ungreased baking sheets.Bake 10 to 12 minutes or until lightly browned. Cool on baking sheets 1 minute. Remove to wire racks to cool completely.
