Tired of making the same old south Indian dosa? Here is a Maharashtra style of making dosa that is rich in nutrients and tastes awesome. Chef Annuradha Toshniwal makes simple and easy to make quick homemade ragi dosa. <br /> <br />Ingredients: <br />Chutney: <br />1/2 cup fresh coconut <br />1 tbsp roasted gram <br />2-3 green chillies <br />Ginger ( chopped ) <br /> <br />Tempering: <br />1 tbsp oil <br />salt <br />1/2 tsp mustard seeds <br />5-6 curry leaves <br />2 red chillies <br /> <br />Dosa: <br />1/4 cup urad dal ( soaked ) <br />1/2 cup ragi flour <br />2-3 green chillies <br />1 chopped onions <br />4-5 curry leaves ( chopped ) <br /> <br />Method: <br />- Grind fresh coconut, roasted gram, green chillies, ginger, water in a grinder to make a smooth paste <br />- Heat some oil in a pan and add salt to the paste <br />- Add mustard seeds, curry leaves, red chillies to the hot oil and add it to the coconut paste, mix well everything <br />- Grind the soaked white lentils to make a smooth paste. <br />- Add ragi flour, water to the paste and whisk it well. <br />- Add salt, green chillies, chopped onions, chopped curry leaves and mix everything well <br />- Cool the tava by sprinkling water and wiping it off with a wet cloth cloth <br />- Take a portion of the batter and gently spread it circular motions. <br />- Sprinkle some drops of oil around the dosa and let it cook <br />- Once the outer rim changes color, flip the dosa and cook it. <br />- Serve hot the dosa with the chutney! <br /> <br />Director: Neha Sarkar <br />Camera: Jay Nayak, Kawaldeep Singh Jangwal <br />Editing: Pratik Jain <br />Creative Head: Kavya Krishnaswamy <br />Producer: Rajjat A.
