Stuffed mushrooms are easy to make, great for parties and the variations are endless. All you need is the regular button mushrooms for perfect stuffing. You can get as creative as you like with the filling. Chef Shantanu Gupte brings you a recipe for crispy, crunchy breaded mushrooms served with cool, tasty dip. <br /> <br />Ingredients: <br /> <br />4 cored large mushroom caps (button mushrooms) <br /> <br />For filling: <br />1 tbsp butter <br />1/2 tbsp oil <br />4 to 5 cloves garlic finely chopped <br />1/2 large onion finely chopped <br />1/2 tsp red chilli flakes <br />5 to 6 whole button mushrooms with stems finely chopped <br />1 tbsp finely chopped celery stalks <br />1 sprig of thyme <br />2 basil leaves <br />1 tsp oregano <br />1/2 tsp white sesame <br />1 tbsp cream <br />1 tsp mustard <br />2 tbsp Grated Cheddar cheese <br />pepper to taste <br />salt to taste <br /> <br />For coating the mushrooms: <br />1 egg <br />1 tbsp refined flour <br />1 tsp mustard <br />1/2 tsp oregano <br />1/2 tsp paprika <br />1/2 tsp Cajun seasoning <br />Salt & Pepper to taste <br />bread crumbs <br />black sesame <br /> <br />For the dip <br />1 1/2 tbsp mayonnaise <br />11/2 tbsp tomato puree <br />Salt to taste <br /> <br />Oil for frying <br /> <br />Method: <br /> <br />To make the filling: <br />- Take a pan, add a dollop of butter and plain oil and heat it. <br />- Put some garlic and red chilli flakes into it and sauté them slightly. <br />- Put in some finely chopped onion and sauté slightly, not allowing the onion to brown. <br />- Add the finely chopped mushroom stems to the above ingredients and sauté them nicely. <br />- Add some more butter along with finely chopped celery stalks, thyme leaves, finely chopped basil leaves, dried oregano and toasted white sesame seeds and mix them all together. <br />- Add a little amount of cream to the above ingredients in order to bind them together. <br />- add some mustard and mix it all together. <br />- Take the pan off heat and add some grated cheese into it along with a some freshly crushed black pepper. <br /> <br />For stuffing the mushrooms: <br />- Core the mushroom caps slightly from inside. <br />- Take a spoonful of the stuffing and stuff the mushrooms with it using the spoon. <br /> <br />- To coat the mushrooms: <br />- Break an egg into a container and add in it refined flour, mustard, oregano, paprika, salt, pepper and Cajun seasoning and beat them all lightly. <br />- Take some bread crumbs in a bowl and add black sesame to it and mix it through. <br />- Coat the mushrooms in the egg and flour mixture and then dip them in the bread crumbs.
