The Piña Colada is one of the best of the bunch. In this episode, Kathy blends one in her Vitamix blender and makes it a bit luxurious with an aged rum float.<br /><br />Watch on Small Screen: http://www.smallscreennetwork.com/video/446/liquid_kitchen_luxury_pina_colada/<br /><br />Recipe:<br />1/4 cup chopped fresh pineapple<br />1 1/2 oz Mount Gay Silver Rum<br />1 oz fresh lime juice<br />1 oz Cocoa Lopez cream of coconut (2 Tbsp.)<br />1 1/2 oz pineapple juiceIce<br />1/2 oz float aged rum<br /><br />Instructions:<br />Place pineapple, rum, lime juice, Coco Lopez, and pineapple juice in a high-quality blender, such as the Vitamix BarBoss Advance®.<br />Fill a tall (12 oz) glass with ice and add the ice to the blender. Secure lid on blender. <br />Blend on high till drink is icy smooth. Pour into a tall glass.<br />Drizzle with a float of aged rum. <br />Garnish with fresh pineapple, lime, cherry and pineapple leaf.
