Annuradha Toshniwal is up with a simple soup recipe called, chilled potato and basil soup. This soup is absolutely delicious and is undoubtedly loaded with nutritious ingredients and aromatic flavors of basil. <br /> <br />Ingredients: <br /> <br />1 tbsp. butter <br />2 cloves chopped garlic <br />2 medium potatoes - peeled & cut Into pieces <br />1/4 cup fresh basil <br />2 cups water <br />2 tbsp. cashew nuts - ground <br />1tsp. lime juice <br />salt & pepper to taste <br /> <br />Method: <br /> <br />- In a pressure cooker, heat the butter and add the chopped cloves of garlic and stir well. <br />- Add the potatoes and few basil leaves and stir well. <br />- Add the water and close the lid of the pressure cooker. <br />- Wait for 2-3 whistles so that the potatoes are well cooked. <br />- Open the lid and then using a hand blender, blend all the ingredients well. <br />- Add the powdered cashew nuts, salt, pepper and lemon juice and mix it well. <br />- Tear in few basil leaves on the top. <br />- Pour the soup in a bowl and keep it in the refrigerator to cool down. <br />- Serve chilled. <br /> <br />Director: Suchandra Basu <br />Camera: Kawaldeep Singh Jangwal, Manjeet Kataria <br />Editing: Pratik Jain <br />Creative Head: Kavya Krishnaswamy <br />Producer: Rajjat A.
