Shredded apple gives these light fluffy pancakes some incredible flavour! <br /> <br /> <br />2 large eggs <br />1-1/2 cups (375 mL) milk <br />2 cups (500mL) all-purpose flour <br />1 tsp (5 mL) baking powder <br />1/4 cup (50 mL) sugar <br />2 medium apples, peeled and coarsely grated <br />1 tsp (5 mL) vanilla <br />Butter for frying (or vegetable oil) <br />Confectioner’s sugar for topping <br /> <br /> <br />Whisk together the eggs, milk and vanilla in a bowl. <br />In a smaller bowl, whisk together the flour, baking powder, salt and sugar. <br />Stir the dry ingredients into the wet, then blend in the grated apples. <br />Heat a thumb sized piece of butter in a skillet over medium heat. Drop 1/3 cup of batter into the pan and flatten it out a little. Cook until golden brown underneath, then flip and cook for an additional two to three minutes. <br />Top with powdered sugar and serve immediately. Alternatively keep on a rack in a 200ºF (100ºC) oven until you have enough ready to serve.
