Treat yourself to a refreshing meal this festive season with Coriander Rice. THe essence of the recipe is freshly chopped coriander and more importantly the coriander stems. Like a lot of South Indian dishes, Coriander Rice too can be made in no time and tastes heavenly. <br /><br /><br />Ingredients<br />1 Cup Cooked Rice<br />1 Small Bunch Coriander Leaves, Finely Chopped<br />Coriander Stems, Finely Chopped<br />1½ Tbsp Oil<br />1 Tsp Mustard Seeds<br />1 Tsp Urad Dal (Black Gram Skinned)<br />Few Curry Leaves<br />1 Tsp Chana Dal (Bengal Gram Spilt and Skinned)<br />Salt to taste<br />2 Fresh Chillies (Green and Red), Finely Chopped<br /><br />TIP WHILE COOKING:<br /><br />One can also use ghee instead of oil for a better flavour.<br /><br />You can process coriander the way you like, either by grinding it with the chillies or finely chopping it. <br /><br />If finely chopping the coriander, use immediately to avoid darkening of the leaves.
