Chef Shantanu Gupte brings you an easy, hassle-free recipe for the perfect roast potatoes that taste delicious. <br /> <br />Ingredients: <br /> <br />4-5 parboiled potatoes <br />3-4 tbsp oil <br />3-4 tbsp butter (oil and butter should be in the same quantity) <br />1-2 sprigs of rosemary <br />salt and pepper to taste <br />1 garlic - finely chopped <br />rosemary leaves - finely chopped <br />5-6 cherry tomatoes <br />10-12 olives <br />1 tbsp honey <br />parsley - finely chopped for garnish <br /> <br />Method: <br /> <br />- Boil the potatoes for 2-3 minutes. <br />- In a pan, heat the oil and an equal quantity of butter. <br />- Once the butter melts, add the parboiled potatoes in it. <br />- Add the sprigs of rosemary, salt to taste and freshly cracked black pepper to the above ingredients and let them cook. <br />- Once the potatoes turn slightly brown in colour, drain the excess oil from the potatoes and place them on the baking tray. <br />- Spread out the potatoes and sprinkle chopped garlic, finely chopped rosemary leaves, salt and pepper over them. <br />- Add the whole cherry tomatoes and the olives and also pour the oil in which the potatoes had been cooked. <br />- Roast the potatoes at the temperature of 200 degrees Celsius for about 8-10 minutes. <br />- After about 10 minutes, add honey to the potatoes and mix well. <br />- Put the tray back in the oven at a temperature of 250 degrees Celsius to make the potatoes crisp. <br />- Take the potatoes out on an absorbent paper.
