Chef Shantanu Gupte brings you this delectable chicken starter recipe called, chicken olivetti, in which, strips of juicy and tender chicken are wrapped around olives, fried and served with sauce. <br /> <br />Ingredients: For 5 pieces of Chicken Olivetti <br /> <br />1 chicken breast <br />5 pitted olives <br /> <br />For marination: (ingredient amounts to be adjusted to taste) <br />1 egg <br />salt & pepper to taste <br />chilli flakes <br />thyme <br />pinch of oregano <br />mustard <br />smoky barbecue sauce <br />2 tbsp cornflour <br /> <br />For sauce: <br />1 1/2 tbsp butter <br />thyme <br />4 to 5 garlic - finely chopped <br />1 tsp chilli flakes <br />5 to 6 tbsp cream <br /> <br />For bread crumb mixture: (ingredient amounts to be adjusted to taste) <br />bread crumbs <br />oregano <br />chilli flakes <br />black sesame <br />paprika <br /> <br />Oil to Fry <br /> <br />Method: <br /> <br />To make the sauce: <br />- In a pan, add butter, thyme, chopped garlic, chilli flakes and cream and mix all the ingredients well. <br />- The sauce is ready. Take it off the flame. <br />- Add the lemon juice and tomato sauce and mix well. <br />- Strain the sauce. <br /> <br />To make the bread crumb mixture: <br />- On a plate, add the bread crumbs, oregano, chilli flakes, black sesame and paprika and mix everything well. <br /> <br />For marination: <br />- Slice the chicken breast pieces into thin strips and flatten them slightly. <br />- In a bowl, add the chicken, egg, salt, chilli flakes, thyme, oregano, mustard, smoky barbecue sauce, cornflour, salt (again) and cracked pepper and mix all the ingredients with hands. <br /> <br />To make chicken ollivetti: <br />- Coat the chicken strips with the bread crumb mixture. <br />- Wrap the chicken strips along the black olives and secure with a cocktail stick. <br />- Drop the chicken olivettis in hot oil and fry them until they are crisp. <br />- Once they are ready, take them out on an absorbent paper. <br />- Serve the crispy chicken olivettis with the sauce. <br /> <br />Host: Shantanu Gupte <br />Director: Vaibhav Dhandha <br />Camera: Kawaldeep Singh Jangwal, Manjeet Kataria <br />Editing: Ravi Varma <br />VFX : Shravan Shah <br />Creative Head: Kavya Krishnaswamy <br />Producer: Rajjat A.
