Our Chef Archana brings to you the delightful spicy mouth watering recipe of Pandhra Rassa which is a speciality of Kolhapur. Pandhra Rassa is a white colored chicken gravy with lots of spices. This chicken recipe is very easy and quick to make at home. <br /> <br />Ingredients: <br /> <br />250 gms Chicken <br />2 tbsp Oil <br />3 Dry Red Chillies <br />1 Onion, chopped <br />1 tsp Masala [Cinnamon (dalchini), Caraway Seeds (shahjeera), Cloves (lavang), Coriander seeds (dhane) ] <br />1 tbsp Ginger Garlic Paste <br />1/2 tsp White Pepper Powder <br />2 tbsp Cashew - Khaskhas - Dried Coconut paste <br />1 Cup Coconut Milk <br />Salt to taste <br />1 Cup Water <br /> <br />Method: <br /> <br />- In a pan, add oil and dry red chillies. <br />- Then add onion, masala (cinnamon, caraway seeds, cloves, coriander seeds), salt and mix well. <br />- Add ginger garlic paste, white pepper powder, chicken & mix everything well. <br />- Then add cashew - khaskhas - dried coconut paste and mix well. <br />- Add coconut milk and again mix everything well. <br />- Add some water and let the gravy boil on a low flame for 5 to 7 minutes. <br />- Spicy Hot Pandhra Rassa is ready. <br /> <br />Director: Narayan Thakur <br />Camera: Kavaldeep Singh Jangwal, Manjeet Katariya, Suchandra Basu <br />Editing: Ravi Varma <br />Creative Head: Kavya Krishnaswamy <br />Producer: Rajjat A.
