This is sometimes called the 'Gin Mojito' - as with most Gin cocktails we prefer a stir over a shake. We serve this in a 'cocktail' glass... but serve it in an old fashioned, or coupe (champagne saucer) if you wish. <br />We don't muddle this cocktail, we find that can give some off flavour from the mint. So we just slap the mint to release some of the oils, and keep going. <br />You'll also see many recipes that call for lime juice instead of lemon; the earliest references to this cocktail indicate lemon... do as you wish - you're drinking it. <br /> <br /> <br />Ingredients: <br />5 Mint leaves <br />1 oz Simple syrup (one part sugar, one part water) <br />1 oz Lemon juice <br />2 oz Gin <br /> <br />Garnish: Mint sprig <br />Glass: Cocktail <br /> <br />Method: <br />Slap or spank the mint leaves then throw them into a mixing beaker. Add the lemon juice and gin, and fill with ice. Stir, and strain into a fully chilled cocktail glass. Garnish with a mint sprig that you've slapped around a bit.
