Another of my favourite Russian stews was cooked a lot by my Grandmother but sadly I can’t remember the name. I love it because it makes me think of my childhood and is most comforting. It involves a delicious Russian/Polish sausage called Kielbasa, which can be smoked pork, beef, turkey, lamp, chicken or veal. <br /> <br />It also includes an absolute favourite of Dmitry Leus Cuisine, sauerkraut or pickled cabbage. Simply put a chunk of butter in a large pan (Dutch oven preferably), add in diced onion and the sausage and brown for a few minutes with the butter. Next, add chopped potatoes and apples, tomatoes and sauerkraut. Then season with salt, pepper and caraway seeds. <br /> <br />Finally, put the lid on the pan and allow to simmer over a low heat for about 30 minutes until the potatoes are beautifully soft. It is an absolutely delicious combination of meaty, pickly, sweet and sour deliciousness and very easy to make. A little Dmitry Leus Cuisine tip is to make your own sauerkraut for extra freshness.
