So moist and delicious! This will soon become a family favourite. <br /> <br />Ingredients: <br />¾ cup (175 mL) butter, at room temperature <br />1 cup (250 ml) brown sugar <br />3 eggs <br />1 cup all purpose flour <br />1 Tbsp (15 mL) baking powder <br />1 tsp (5 mL) ground cinnamon <br />1 1/2 tsp (7 mL) ground ginger <br />zest from 1 lemon <br />3 apples, peeled <br />1 Tbsp (15 mL) Demerara sugar <br /> <br />Method: <br />Preheat oven to 350ºF (180ºC). <br />Grease and line a 13x9” baking pan. <br /> <br />Mix together flour, baking powder and spices <br />Cream together butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold dry into butter mixture, add lemon zest, and 1 chopped apple and mix into batter. <br /> <br />Fill prepared pan, smoothing top with a spatula. Bake for 10 mins. Remove from oven, and arrange sliced apples over batter. Sprinkle with demerara sugar, and bake for another 20-25 mins, or until a skewer inserted comes out clean. Cool in pan.
