This quick 5 minute vegetarian recipe is not just healthy but also very easy to make at home. <br /> <br />Ingredients: <br /> <br />1 Eggplant (Baingan / Vanga) <br />2 Onions, chopped <br />2-3 Green Chillies, chopped <br />1 Cup Curd / Dahi <br />Coriander Leaves <br />Salt to taste <br /> <br />Method: <br /> <br />- Apply some oil on the egg plant and roast it from all the sides on a medium flame. Once the eggplant is cooked remove it on a plate and allow it to cool. <br />- Peal off the black skin and mash the egg plant. <br />- In a bowl take the mashed eggplant. Add onions, green chillies, coriander leaves, salt & dahi. <br />- Mix everything well. <br />- Serve the Vangyache Bharit with hot bhakris.
