Most ginger syrup is just water, sugar, and ginger; simmered and steeped. Easy to make and very enjoyable? <br />But we always thought that they lacked a little something - there was no wow factor. So we amped it up a bit with some extra spices, and came up with something that will blow your socks off! <br /> <br /> <br />Ingredients: <br />1 cup (250 mL) brown sugar <br />1 cup (250 mL) white sugar <br />2 cups (500 mL) water <br />5 oz (150g) sliced ginger <br />2 tsp (10 mL) cardamom pods <br />1 tsp (5 mL) whole allspice <br />1 tsp (5 mL) peppercorns <br />3 star anise pods <br /> <br />Method: <br />In a pot, combine the?water, sugars,and ginger. <br />Toast the whole spices in a dry pan until they just begin to become fragrant. Add the spices to the sugar and water mixture and bring it to a simmer. Simmer for about 15 minutes and then turn off the heat. <br />Allow mixture to steep until cool; then strain into a sealable container and store it in the refrigerator <br />Dry out the slices of ginger and eat them like candy. <br />2 Tbsp (30 mL) of syrup with <br />12 oz soda water and some ice makes a very refreshing glass of ginger ale. <br /> <br /> <br />Makes 3 cups of syrup
