"It is believed that only experts can cook Punjabi Laccha Paratha, which is a multi-layered shallow fried North Indian flat bread. At the end of the day, Roti/Indian bread served with vegetables and lentils is most comforting for any Indian. <br /> <br />Laccha paratha made with regular roti dough and spiced with some carom seeds adds a great twist to the regular mundane paratha. Smear some clarified butter and serve hot with your favourite dish. <br /> <br />Ingredients required to make this yummy and delicious Laccha Paratha include: <br /> <br />200 gms Whole Wheat flour <br />150 ml water <br />salt to taste <br />1 tbsp oil <br />1 tablespoon of carom seeds <br />Clarified Butter (Ghee ) <br /> <br />Follow these Step by step instructions to make this exotic Indian bread called Laccha Paratha: <br />1) Make the simple Roti dough with 200 gms of wheat flour, by adding 150 ml of water and a pinch of salt to knead it together <br />2) Incorporate 1 tbsp of oil in the dough and massage it well until the oil has disappeared into the dough. <br />3) Roll out dough ball in a circular shape using some dry flour. Now spread 1/2 teaspoon ghee or oil evenly over the entire surface using your hand and sprinkle some carom seeds (ajwain) on to it. <br />4) Slit approx 1/3 inch wide strip with a knife and by using two fingers roll out from the edge of the paratha to the other into the shape of a cone. Now from the top edge of the rolled raw paratha, lift and fold it backwards. <br />5) Once again roll out the paratha into a circular shape. And start rolling the paratha with the help of fingers into one long even roll (until it can be stretched without breaking) <br />6) Smear little clarified butter so that the dough can stick together when up <br />7) Roll it like a Swiss roll. Press and stick the outer end against the roll’s immediate surface. Flatten out the roll into a circular shape for cooking. Prepare the remaining rolls. <br />8) Your Laccha Paratha should now be heated on a tawa or griddled over a medium flame. Place the raw laccha paratha on a hot tava. When you see tiny bubbles rise on the surface, flip it upside down. And cook until its golden brown. <br /> <br />Laccha Paratha is ready to be served with delicious Yogurt Mint Chicken.
