Light and airy on the inside - crispy on the outside, and perfect with powdered sugar or maple syrup! <br /> <br />Ingredients: <br />3 eggs <br />1¾ cups (450 mL) buttermilk <br />½ cup (100 mL) melted butter <br />2 cups (500 mL) all purpose flour <br />1 Tbsp (15 ml) baking powder <br />1⁄4 cup (60 ml) superfine sugar <br />1 tsp (5 mL) salt <br /> <br /> <br />Method: <br />Pre-heat waffle iron. <br />Whisk together flour, sugar and salt into a large mixing bowl and make a well in the centre. <br />Whisk together eggs, buttermilk and vegetable oil in a large jug until well combined. <br />Whisk egg & buttermilk mixture Into flour mixture to form a batter; with just a few lumps. <br />If batter is too thick, stir in an extra 1–2 Tbsp of buttermilk. <br />Pour 1⁄2 cup of batter into each waffle square and close lid to cook. <br />Repeat with remaining batter.
