It is extremely healthy and very easy to make! <br /> <br />Ingredients for Undhiyu: <br />1/2 Cup Oil <br />Brinjal, chopped <br />Raw Banana, chopped <br />Purple Yam, chopped <br />Potato, chopped <br />1/2 Cup Surti Papadi, chopped <br />1/2 Cup Val Papadi Seeds <br />1/2 Cup Tuvar Dane <br />1 tbsp Ginger Garlic Paste <br />1 tsp Carom Seeds <br />1 tsp Garam Masala <br />1/2 tsp Black Pepper Powder <br />1 tsp Sugar <br />Salt to taste <br /> <br />To Make Green Masala Paste <br />2 Cup Grated Coconut <br />1 tbsp Coriander & Cumin Seeds Powder <br />2 tbsp Ginger Garlic Paste <br />1 1/2 Cup Coriander Leaves <br />1 tsp Carom Seeds <br />1 tsp Green Chilli Paste <br /> <br />Ingredients for Muthiyas: <br />1 Cup Flour Mixture <br />1 tsp Mix Masala <br />1 tsp Ginger Garlic Paste <br />1/2 tsp Turmeric Powder <br />1/2 tsp Carom Seeds <br />Salt to taste <br />Oil <br /> <br />Method: <br /> <br />To Make Muthiyas <br />- In a large bowl add flour, mix masala, ginger garlic paste, carom seeds, turmeric powder & salt. Add little water and make a soft dough. <br />- Make small muthiyas and deep fry them in hot oil. <br /> <br />To Make Undhiyu <br />- In a pan heat some oil. Add carom seeds, green chillies and coriander leaves. <br />- Add ginger garlic paste, turmeric powder and mix well. <br />- Add all the chopped vegetables, tuvar dane, surti papadi & val papdi. Mix well. <br />- Add the masala paste, salt and again mix all the ingredients. <br />- Add some water & cover it with a lid. Let the vegetables cook properly. <br />- Then add garam masala, black pepper powder, muthiya and sugar. Mix everything well. <br />- Cover it with a lid and let everything cook on a low flame for 10 minutes. <br />- Serve the Undhiyu with Puri.
