Learn how to make delicious Christmas cake recipe from our chef Archana on Ruchkar Mejwani. <br /> <br />Ingredients: <br /> <br />2 Eggs <br />120 gms Powdered Sugar <br />100 gms Soft Butter <br />120 gms All Purpose Flour <br />1/2 Cup Tutty Fruiti, Raisins & Walnuts chopped and soaked in Port Wine for 7-8 hours <br />1 tsp Vanilla Essence <br />1/2 tsp Baking Powder <br />2 tbsp Milk <br />1 tbsp Coffee Powder <br />Port Wine for garnishing <br /> <br />Method: <br /> <br />- In a large bowl add powdered sugar, eggs, butter & vanilla essence. With the help of an electric beater mix everything to form a soft mixture. Keep it aside. <br />- Mix coffee with milk and keep it aside. <br />- In another bowl add all purpose flour and baking powder. Give a stir. <br />- Add chopped and soaked tutty fruiti, raisins and walnuts. Add this to the egg mixture. <br />- Then add milk mixed with coffee powder. Mix everything well. <br />- Pour the cake batter in a greased aluminium tray. Tap the tray couple of times to even the batter. <br />- Pre heat your oven for 5 minutes. <br />- Bake the cake on 180 degree celsius for 45 minutes. <br />- Remove the cake in a wire rack while its warm and pour some wine on it. <br />- Cover the cake for 10 minutes. <br />- Cut the cake into pieces and serve!
