Ingredients:<br />~4large shredded carrots<br />-1 cup raw walnuts<br />~1 cup of golden raw raisins (to place in between cake layers so delicious! )<br />~1.5 cups of pitted dates<br />~Ginger spice or a pinky of fresh ginger<br />~1 tsp Cinnamon<br />-3/4 tsp nutmeg<br />-1/2 cup shredded unsweetened coconut<br />~Slice of vanilla bean/ 1-2tsp vanilla extract<br /><br />Vanilla Icing Frosting! <br />~2 cups of soaked raw cashews soaked overnight - drain and rinse in clem water (soaked at least 4 hours)<br />~2 cups of raw young coconut water<br />~1.5 cups of pitted dates<br />~1tbsp of raw fresh, squeezed lemon juice <br />~Sprinkle of cinnamon<br />~Pinch of vanilla bean or vanilla extract (1-2 tsp)<br />pinch of sea salt<br />-zest of 1/2 an orange<br /><br /><br />(optional) toppings<br />:<br />Edible flowers<br />crushed pistacios<br />shredded coconut<br />walnuts<br />zested orange<br />sprinkled cinnamon<br /><br />freezer before serving******* 6 inch spring form pan.
