Are you still frying your hashbrowns in a pan? <br /><br />Ingredients:<br />4 lbs. (2 Kg) waxy potatoes<br />3 eggs<br />½ cup (125 mL) sour cream<br />¼ cup (60 mL) melted butter<br />2 Tbsp (30 mL) horseradish <br />Salt and pepper, to taste<br /><br /><br />Method:<br />Grate potatoes, into a clean tea towel. Wrap it up and squeeze to remove most of the water. <br />Mix together eggs, sour cream, butter and horseradish in a large mixing bowl. Toss in the grated potatoes and mix well. Season with salt and pepper. <br />Spread about 1 cup of the potato mixture into each waffle square. <br />Cook for 15 minutes or until potatoes are cooked and crispy.
