Irani Gosht (mutton) watch my website at http://www.chefshaheen.com <br />watch easy quick and simple <br /> <br />Ingredients <br /> <br />Onion...................................­............4 medium (chopped) <br />Dates...................................­............8-10 soaked in water. <br />Green chilli..................................­....5. <br />Coriander leaves............................1 table sp. <br />Curd(sour)..............................­........1/2 cup. <br />Water melon seeds........................1 table sp(soaked in water). <br />Red chilli powder...........................2 tsp. <br />Garam masala paste....................2 tsp. <br />Ginger & garlic paste....................3 tsp. <br />Coriander powder.........................3 tsp. <br />Lemon juice of..............................1/2 lemon. <br />Salt.................................. .............to taste. <br />Green cardamom powder...........1 tsp. <br />Turmeric powder.........................1/2 tsp. <br />Mutton..................................­........1/2 k.g. <br />Tomato............................. ...........2 large cut. <br />Whole garam masala ..................1 bay leaf, 1 cinnamon stick, 1/4 caraway seeds, 1 chhabeelas, 1 pattar phool, 1 large cardamom, 10-15 black pepper . <br />Oil.....................................­........... according to requirement <br /> <br />Method <br /> <br />1) Take mutton in a bowl add curd to it, add salt, ginger and garlic paste mix well, add turmeric powder coriander powder lemon juice and red chilli powder keep it for 1 hour (marination). <br /> <br />2) Take a cooker, add oil in the cooker, put bay leaf, green cardamom, large cardamom, caraway seeds , black pepper and fry them add onion and fry till they become pink. <br /> <br />3) Add the mutton which we have marinated give a good mix. <br /> <br />4) Cook for 5-6 min , add tomatoes to the mutton cook for 5-6 min. <br /> <br />5.) Add garam masala and cook for 3-4 min, Now add paste of green chilli, coriander leaves, dates and water melon seeds. <br /> <br />6) Mix well add water according to requirement. Cook for 20-25 or till the mutton is done. <br /> <br />7) You'll need about 250 to 300 ml of water. <br /> <br />8) Serve with roti, tandoori or naan.
