Welcome to Xiao's Kitchen <br />Recipe for: Aubergine Parcels <br /> <br />A great combination of aubergine and lamb. fabulous for party or buffet. <br /> <br />Ingredients: <br />2 aubergines <br />250g mince lamb <br />1 teaspoon ground white pepper <br />1 teaspoon salt <br />Half of a cm ginger root <br />100g Plain flour <br />2 eggs <br />100ml milk <br /> <br />Methods: <br />Chop ginger <br />Place the mince lamb into a bowl and add the ginger <br />Add the white pepper, salt and 1 Tbsp of oil <br />Then mix ingredients together <br />Slice aubergine into 0.5cm thick slices <br />Then Insert a cut between each slice to create a pocket <br />Take about 1 Tsp of mince lamb and stuff into the pocket <br />Combine the plain flour, milk, salt and eggs to form a batter <br />Heat 1 litre of oil in a wok until hot <br />Dip the stuffed aubergine slices into the batter mix <br />Place the slices into the hot oil <br />Deep fry for 2 minutes each side <br />Remove from the oil and drain <br />Transfer onto a dish <br />Garnish and serve <br /> <br />Thank you for watching, for more recipes click below: <br />https://www.youtube.com/channel/UCQri6FfO31rtR7tK5gJbimQ
