Welcome to Xiao's Kitchen <br />Recipe for: Sweet & Sour Fish <br /> <br />It's sweet, it's sour, it's spicy and it's savoury. My dad loves this when I cooked it for my family for the first time. Cook it with me and find out! <br /> <br />Ingredients: <br />3 Cod Fillets <br />2 Green Peppers <br />2 Tomatoes <br />4 Cloves Garlic <br />0.5cm Ginger <br />2 Spring Onions <br />1 Tsp Chilli Flakes <br />Small Bunch Coriander <br />3 Tbsp Cornflour <br /> <br />For the sauce: <br />100ml of Water with: <br />1 Tbsp Sugar <br />2 Tbsp Tomato Puree <br />4 Tbsp Dark Soy Sauce <br />4 Tbsp Vinegar <br />1 Tbsp Cornflour <br /> <br />Methods: <br />Cut fish into 1cm cubes and place into a large mixing bowl <br />Sprinkle 3 Tbsp corn flours and mix well for an even coverage <br />Chop garlic, ginger and spring onions <br />Cut green peppers into bite sizes pieces <br />Cut tomatoes into bite sized pieces <br />Roughly chop the coriander <br /> <br />To make the sauce: <br />Add the sugar, tomato Puree, vinegar, soy sauce, cornflour and mix. <br />Then add the water while mixing. <br />Heat 1 Tbsp oil in a pan <br />Add garlic, ginger, spring onion & chilli flakes, fry for few seconds <br />Pour the sauce mixture into the pan and bring to the boil, stir continuously <br />Add salt to your taste and then remove from heat <br /> <br />Heat 1 litre oil in a wok until smoking hot <br />Place fish one piece at the time and deep fry until turning light brown and floating <br />Remove from oil and drain <br /> <br />Bring the sauce to the boil again on high heat <br />Add green pepper, tomato and coriander, stir for a minute <br />Add the deep fried fish into the wok, gently turn the contents until evenly mixed <br />Transfer contents onto a dish, garnish and serve <br /> <br />Thank you for watching.
