Part two of Fearne Cottons Happiness Project Raw Food. Tanya and Fearne cook Tanya’s raw food cheesecake recipe!<br /><br />Ingredients:<br />BASE:<br />150g pitted dates (soaked for 4-6 hours)<br />115g brazil Nuts<br />45g desiccated coconut<br />½ tsp Himalayan Rock salt<br /><br />CREAM:<br />260g cashew nuts soaked for 4-6 hours<br />210g Coconut oil, melted<br />120ml Lemon juice<br />140g Xylitol<br />2tsp Vanilla Extract<br /><br />STRAWBERRY TOPPING:<br />600g fresh strawberries<br />2 handfuls pitted dates<br />1 tsp vanilla extract<br /><br /><br />Recipe:<br /><br />1. Make the base layer by pulsing all the ingredients in a food processor. Transfer this mixture into a cake tin and press it down evenly with your hands to form a crust base.<br />2. Blend all the ingredients for the cream layer in a food processor, until it reaches a smooth consistency. Pour the cream mix over the crust and refrigerate for 3 hours to set.<br />3. To make the strawberry layer, place half the strawberries in the blender with the dates and vanilla extract and blend until smooth.<br />4.
