Ingredients: <br />One 4 to 5 pound duck <br />1 apple rough chop <br />1/2 onion rough chop <br />1 stick of celery rough chop <br />salt/pepper to taste <br />dried rosemary <br />dried parsley <br />3 pounds Yukon Gold Potato chunks <br /> <br />Dry the duck with paper towels and stuff it with your celery, onion and apple. <br />I did not oil my duck, but I think you should. <br />Salt and pepper your duck, then sprinkle with paprika. <br />Bake your duck @ 400F for 60 minutes <br />Remove your duck from baking dish and add your potatoes. <br />Bake 375 for 30 minutes. <br />Take out of oven and turn your potatoes over, then tent with aluminum foil and bake 375 for 30 more minutes. <br />Allow to cool 10 minutes then serve.
