Ingredients: <br /> <br />1 medium tomato chopped <br />1 small onion chopped <br />1-2 garlic cloves sliced <br />1/4 cup parsley chopped <br />1-2 Tbsp hot green pepper chopped <br />1 Tbsp tomato paste <br />1/4 tsp curry powder <br />1/4 tsp cumin powder <br />1/4 tsp coriander powder <br />1/8 tsp red hot pepper or paprika <br />1 Tbsp lemon juice <br />salt and black pepper <br />2-4 pieces of tilapia fillet <br />oil <br />Steps : <br />-In a small pan heat about 1-2 Tbsp oil over low-medium heat then add onion, green pepper and garlic and cook for a few minutes. <br />-Add tomato and and all the spices and cook for a few minutes. <br />-Add tomato paste and lemon juice and cook for a couple of minutes. <br />-Add about 1/2 cup of water, mix and cover and cook over low heat for about 5-8 minutes until vegetables are tender. <br />-Finally add parsley and mix and cook for a minutes and the sauce will be ready. <br />-In a different pan heat a little of oil over low-medium heat then add tilapia fillet that are seasoned with only salt and black pepper. Cook for about 5-7 minutes on each site. <br />- For serving Scope a little of the tomato sauce on top of each fillet and along with white rice or white rice and vermicelli. <br />-You can also serve it with burghel, quinoa or with simple green salad and bread.
