These delicious and easy cookies were requested by my son for his school\'s potluck party. It was a family fun day. My kids love gingerbread cookies and they enjoy making them. They have fun cutting and decorating them especially my little one who is 5 years old. she is my mommy little helper :). I like the smell of cinnamon in the house. It is the best time of the year for me and and my family. I wish you a Merry Christmas and Holidays. <br /> <br />Ingredients : <br />3 cups flour <br />11/2 teaspoons Ginger, Ground <br />1 1/2 teaspoon Cinnamon, Ground <br />1 /4 teaspoon baking soda <br />1/2 teaspoon baking powder <br />1/4 teaspoon Nutmeg, Ground <br />1/4 teaspoon cardamom <br />1/4 teaspoon salt <br />1/2 butter, softened <br />1/2 cup firmly packed brown sugar <br />1/2 cup molasses ( I used date syrup ) <br />One beaten egg with 1/4 tsp vanilla extract. <br />Steps: <br />1. Mix flour, ginger, cinnamon, baking soda, baking powder, cardamom, nutmeg and salt in large bowl. <br />2. Beat butter and brown sugar in large bowl with electric mixer or with a whisk until light and fluffy. <br />3. Add egg and mix then add syrup or molasses or honey and mix well. <br />4. Gradually beat in flour mixture on low speed until well mixed. <br />5. Press dough into a thick flat disk then wrap in plastic wrap then refrigerate for 4 hours or overnight. <br />6. Preheat oven to 350°F. Roll out dough to 1/4-inch thickness on lightly floured work surface. Cut into gingerbread men shapes or other shapes. <br />7.Place on ungreased baking sheet that\'s lined up with parchment paper. . <br />3. Bake 12- 17 minutes or until edges of cookies are set and just begin to brown. <br />8. Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely. <br />9. Decorate cooled cookies as desired. Store cookies in airtight container up to 5 days. <br />I used a store bought white frosting tube. Also I made my own by mixing powder sugar and water and make thick batter then added food color to it. The homemade batter I used to decorate was better than the store one.
