Ingredients <br /> <br />8- 10 very small fresh Zucchini <br />For filling <br />1/2 pound ground beef (1 cup) <br />1/2 cup washed and soaked rice for about 20 minutes <br />1-2 Tbsp minced or grated garlic <br />1/2 tsp salt or to taste <br />½ tsp black pepper <br />1 tsp all spices or 7 spices or 5 spices <br />2 tbsp oil <br />Mix all the ingredients well and set aside. <br />For the tomato sauce: <br />1 small onion chopped <br />1-2 garlic cloves slice <br />The inside of the zucchini <br />2-3 Tbsp tomato paste <br />Salt to taste <br />2-3 Tbsp oil <br />1/8 tsp citric acid or lemon juice <br />about 8 cups boiling water <br />Steps:- <br />-Wash zucchinis very well and with a zucchini or vegetables corer hollow out the zucchini be careful not to pierce the skins and keep the zucchini pulp aside. <br />-Stuff the zucchini with meat and rice mix with your hands. <br />-Try to press the meat mixture in the zucchini but not too firm. <br />-Leave 1/4 inches from the top unstuffed. The Rice will expand, so you need to leave some empty space. <br />-In a medium pot, heat about 3 tbsp oil over medium heat. <br />-Add onion and garlic and mix for a few minutes. <br />-Add the zucchini core and cook for a couple of minutes. <br />-Add tomato paste and salt to your taste and cook for a couple of minutes too. <br />-Add boiling water so the liquid reach 1/2 of the pot height then bring everything to boil stage on high heat. <br />-Add citric acid and mix. <br />-Add the stuffed zucchini and lower the heat to low-medium heat. <br /> -Cover and cook until the zucchinis are tender, the rice is cooked and the sauce is thick about 30-40 minutes.
