Caution - this recipe contains peanuts. <br />These are the best PB cookies you’ll ever have! We prefer to use one of the ‘Just Peanuts’ peanut butters, but use whatever you have in your kitchen. <br /> <br /> <br />Ingredients: <br />½ cup (125 mL) butter <br />½ cup (125 mL) sugar <br />½ cup (125 mL) brown sugar <br />1 egg <br />½ tsp (2 mL) vanilla <br />½ cup (125 mL) peanut butter <br />1½ cup (375 mL) pastry flour <br />½ tsp (2 mL) baking soda <br />¼ tsp (1 mL) salt <br /> <br /> <br />Method: <br />Preheat oven to 350ºF (180ºC). <br />In bowl, cream together butter & sugars until fluffy. <br />1 at a time; beat in egg, vanilla, and peanut butter. <br />Whisk together flour, baking soda and salt; stir into butter mixture. <br />Chill for 30 minutes. <br />Drop by rounded 1 Tbsp onto baking sheets, and squish with a fork. <br />Bake in 350°F (180°C) oven until edges are golden, 10-12 minutes. <br />Let cool on baking pan on a cooling rack for 5 minutes; then transfer to racks and cool completely. <br />Makes 24 cookies.
