Banana Bread For Two <br /> <br />What are you going to do with that one over ripe banana on your counter… Here’s your answer. <br /> <br />Ingredients: <br />½ cup (125 mL) all-purpose flour <br />¼ cup (60 mL) pecan pieces <br />½ tsp (2 mL) baking soda <br />pinch of salt <br />¼ cup (60 mL) sugar <br />1 Tbsp (15 mL) butter, melted <br />1 ripe banana, mashed <br />1 Tbsp (15 mL) yogourt <br />½ tsp (2 mL) pure vanilla extract <br />1 egg <br /> <br />Method: <br />Preheat oven to 350ºF (180ºC) <br />Grease a 6 inch round cake pan. <br />In a bowl whisk together flour, pecans, baking soda, salt, and sugar. <br />In another bowl whisk together butter, banana, yogourt, vanilla, and egg. <br />Stir the banana mixture into the flour mixture and transfer to the cake pan. <br />Smooth the top and bake for about 30 minutes. <br />Let cake cool for 10-15 minutes before removing from pan.
