Mini Blueberry Snack Cakes For Two <br /> <br />Ingredients: <br />½ cup (125 mL) all-purpose flour <br />pinch of salt <br />½ tsp (2 mL) baking powder <br />3 Tbsp (42g) butter, softened <br />¼ cup (60 mL) sugar <br />1 egg <br />¼ tsp (1 mL) pure vanilla extract <br />2 Tbsp (30 mL) milk <br />½ cup (125 mL) blueberries <br /> <br /> <br />Method: <br />Preheat oven to 350ºF (180ºC) <br />Grease and flour two 1 cup mini Bundt pans. <br />In a bowl combine flour, salt, and baking powder. <br />In another bowl cream together butter and sugar. <br />Mix in egg and vanilla. <br />To the butter mixture alternate mixing in flour and milk. <br />Fold in the blueberries, and then spoon into the prepared Bundt pans. <br />Bake for 25-30 minutes. <br />Allow to cool for 10-15 minutes before removing from the pans.
