Recipe: <br />-Dry rub <br /> 1/2 cup brown sugar <br /> 1/4 cup salt <br /> 1/4 cup paprika <br /> 1 Tbs garlic powder <br /> 1Tbs onion powder <br /> 1 Tbs black pepper <br /> 1 tsp lemon zest <br /> <br />-Coat chicken breasts with maple syrup and the slather on the rub. <br />-Let stand for 1 hour in the fridge. <br />-Smoke on racks for 1 hr at 225ºF with your favourite wood chips. (we <br /> used maple) <br />-Place in pan and put 4 Tbs of cubed butter on the chicken breasts. <br /> Seal with aluminum foil and cook for 1/2 hr at 225ºF <br />-Remove from pan and dunk the chicken breasts in a mixture of 1 cup <br /> bbq sauce (your favourite) and 1 cup apple juice. <br />-Smoke directly on racks for an additional 1/2 hr. <br />-Remove from smoker and immediately drizzle with warmed honey. <br />-Enjoy!
