Cinnamon Streusel Cake For Two <br /> <br />Rich, moist, and flavourful cake for two! <br /> <br />Ingredients: <br />Topping <br />1½ Tbsp (22 mL) all-purpose flour <br />1½ Tbsp (22 mL) sugar <br />1½ Tbsp (22 mL) brown sugar <br />1 Tbsp (15 mL) butter softened <br />1 tsp (5 mL) cinnamon <br />1/3 cup (75 mL) pecan pieces <br /> <br />Cake <br />¾ cup (175 mL) all purpose flour <br />pinch of salt <br />¼ tsp (1 mL) baking powder <br />¼ tsp (1 mL) baking soda <br />¼ tsp (1 mL) cinnamon <br />¼ cup (60 mL) sugar <br />¼ cup (60 mL) brown sugar <br />¼ cup (60 mL) yogourt <br />1 egg <br />2 Tbsp (30 mL) butter, melted <br /> <br /> <br />Method: <br />Preheat oven to 350ºF *180ºC) <br />Grease and flour a 6 inch round cake pan; line bottom with parchment. <br />Mix together all of the ingredients for the streusel and set aside. <br />In another bowl mix together the flour, salt, baking powder, baking soda, and cinnamon. <br />In a 3rd bowl whisk together the sugars, yogourt, butter, and egg. <br />Mix the wet into the dry and pour into the cake pan. <br />Sprinkle the top of the batter with the streusel mixture, and bake for about 35 minutes. <br />Let the cake cool on a rack for 10-15 minutes before removing from the pan (peel off the parchment as well). <br />Allow to cool before serving… if you can.
