Yeah yeah yeah - not really a pound cake, more like an 1/8th of a pound cake… But you get the idea, it’s for two. <br /> <br />Ingredients: <br />Cake <br />4 tsp (20 mL) poppy seeds <br />½ cup (125 mL) cake and pastry flour <br />¼ tsp (1 mL) baking powder <br />1/8 tsp (.5 mL) salt <br />1/3 cup (75 mL) sugar <br />¼ cup (60 mL) butter, melted <br />¼ tsp (1 mL) pure vanilla extract <br />1 egg <br />1 Tbsp (15 mL) lemon zest <br />1 tsp (5 mL) lemon juice <br /> <br /> <br />Glaze <br />2 Tbsp (30 mL) sugar <br />1 Tbsp (15 mL) lemon juice <br /> <br />Method: <br />Preheat oven to 325ºF (160ºC) <br />Grease and flour a 6 inch round cake pan. <br />In a bowl mix together poppy seeds and a scoop of the flour. <br />In another bowl mix together remaining flour, baking powder, and salt. <br />In a 3rd bowl whisk together sugar, butter, vanilla, egg, lemon zest, and lemon juice. <br />Whisk flour mixture into sugar mixture, then mix in poppy seeds. <br />Scrape into prepared pan and bake for about 25 minutes. <br />Remove from oven and allow to cool in pan for 10-15 minutes. <br />Mix together the two ingredients for the glaze and microwave until it just starts to thicken (about 1 minute). <br />Turn cake out on to wire rack, poke holes in the top with a skewer and brush on the glaze.
