Amazing Wild Game Bird Recipe:\r<br>Stock:\r<br>3-5 lbs of game birds or one large chicken\r<br>2 onions, quartered\r<br>5-6 stalks of celery, chunked\r<br>5-6 cloves of garlic, split\r<br>1 apple, cored and quartered\r<br>1-2 springs each of rosemary and thyme\r<br>1 T kosher salt\r<br>1 tsp ground pepper\r<br>2 T Better than Bullion, reduced sodium chicken base\r<br>Once stock has simmered at least an hour, remove aromatics and add:\r<br>1 lb carrots, diced\r<br>Remove meat from bones and set aside\r<br>3 T. chopped parsley\r<br>Prepare noodle dough/batter:\r<br>5 eggs\r<br>1 tsp salt\r<br>~1/2-1 cup water\r<br>2-3 cups all-purpose flour\r<br>Mix until consistency resembles thick pancake batter\r<br>Add meat and parsley, bring to a rolling boil. \r<br>Push batter through spaetzle maker, or other improvised device.
