English: <br /> <br />Ingredients: <br /> <br />Boil Rice: <br /> <br />Chawal (Rice) Basmati ½ kg <br /> <br />Pani (Water) as required <br /> <br />Pani (Water) 1 litre <br /> <br />Badiyan ka phool <br /> <br />Sirka (Vinegar) 1 tbs <br /> <br />Chicken Fried Rice: <br /> <br />Chicken boneless cubes 200 gms <br /> <br />Dahi (Yogurt) ½ Cup <br /> <br />Adrak lehsan paste (Ginger garlic paste) 1 tsp <br /> <br />Lal mirch powder (Red chili powder) ½ tsp or to taste <br /> <br />Garam masala powder ½ tsp <br /> <br />Haldee powder (Turmeric powder) ¼ tsp <br /> <br />Namak (Salt) ½ tsp or to /> <br />Podina (Mint leaves) chopped ¼ Cup <br /> <br />Chawal (Rice) boiled 2 Cups <br /> <br />Egg & Red beans Fried Rice: <br /> <br />Hara dhania (Fresh coriander) handful <br /> <br />Podina (Mint leaves) handful <br /> <br />Hari mirch (Green chilies) 2-3 <br /> <br />Oil 2 tbs <br /> <br />Pyaz (Onion) chopped 1 small <br /> <br />Zeera (Cumin seeds) 1 tsp <br /> <br />Darchini (Cinnamon stick) 1 <br /> <br />Laung (Cloves) 4 <br /> <br />Sabut kali mirch (Black pepper corns) 7-8 <br /> <br />Red kidney beans boiled ¼ Cup <br /> <br />Matar (Peas) boiled ¼ Cup <br /> <br />Tamatar (Tomato) deseeded & cubes 3 tbs <br /> <br />Namak (Salt) ½ tsp or to taste <br /> <br />Garam masala powder ½ tsp <br /> <br />Anday (Eggs) boiled 2 <br /> <br />Chawal (Rice) boiled 2 Cups <br /> <br />Vegetable Fried Rice: <br /> <br />Oil 2 tbs <br /> <br />Zeera (Cumin seeds) 1 tsp <br /> <br />Aloo (Potato) cubes ½ Cup <br /> <br />Pyaz (Onion) chopped 1 small <br /> <br />Timatar (Tomato) deseeded & cubes 3 tbs <br /> <br />Shimla mirch (Capsicum) cubes ¼ Cup <br /> <br />Gajar (Carrot) cubes ¼ Cup <br /> <br />Corns ¼ Cup <br /> <br />Paprika powder ½ tsp <br /> <br />Haldee powder (Turmeric powder) ¼ tsp <br /> <br />Garam masala powder ½ tsp <br /> <br />Adrak lehsan paste (Ginger garlic paste) 1 tsp <br /> <br />Namak (Salt) ½ tsp or to taste <br /> <br />Chawal (Rice) boiled 2 Cups <br /> <br />Directions: <br /> <br />Boil Rice: <br /> <br />In bowl,add rice and water,soaked for 30 minutes,then drain water and set aside. <br /> <br />In pot,add water and heat it,add star anise,green cardamom,cloves,cinnamon sticks,bay leaf,salt and bring it to boil,cover and cook for 1 minute,remove and discard whole all spices. <br /> <br />Add soaked rice and mix well,add vinegar and cook rice until done,strain and set aside. <br />Chicken Fried Rice: <br /> <br />In chicken boneless cubes,add yogurt,ginger garlic paste,red chili powder,garam masala powder, turmeric powder and salt,mix well and marinate for 30 minutes. <br /> <br />In wok,add oil,onion and mix well. <br /> <br />Add cumin seeds,black pepper corns,cloves and mix well,fry until onion are translucent. <br /> <br />Add marinated chicken,mix well and cook for 3 minutes. <br /> <br />Add mint leaves and mix well,cover and cook for 2 minutes then cook on high flame until water dries up. <br /> <br />Add boiled rice,mix well for 2-3 minutes and serve. <br />Egg & Red beans Fried Rice: <br /> <br />In blender,add fresh coriander,mint leaves,green chilies and blend well. <br /> <br />In wok,add oil,onion and fry until translucent. <br /> <br />Add cumin seeds,cinnamon stick,cloves and black pepper corns and mix well. <br /> <br />Add red kidney beans,peas,tomato,blended greens,salt,garam masala powder and mix well. <br /> <br />Add boiled eggs and give it a good mix.  <br /> <br />Add boiled rice,mix well for 2-3 minutes & serve. <br />Vegetable Fried Rice: <br /> <br />In wok,add oil,cumin seeds and mix well,add potatoes and fry for 2-3 minutes. <br /> <br />Add onion and mix well,add tomato,capsicum,carrot,corns,paprika powder,turmeric powder,garam masala powder,ginger garlic paste and salt,mix well and cook for or 2-3 minutes. <br /> <br />Add boiled rice and mix well for 2-3 minutes & serve. <br /> <br />You can also use leftover rice. <br /> <br />Recipe in Urdu: <br /> <br />Directions: <br /> <br />Boil Rice: <br /> <br />Bowl mein chawal aur pani dal ker 30 minutes kliya bheego dein phir pani nikal dein aur side per rakh dein. <br /> <br />Pot mein pani dal ker garam karein,badiyan ka phool,hari elaichi,laung,darchini,tez paat aur namak dal ker ubal lein aur dhak ker 1 minute kliya paka lein phir sabut garam masala ko nikal ker pheek dein. <br /> <br />Bheegay hoya chawal ker mix karein aur sirak dal ker chawal ubal lein aur strain ker ka side per rakh dein. <br /> <br />Chicken Fried Rice: <br /> <br />Chicken boneless cubes mein dahi,adrak lehsan paste,lal mirch powder,garam masala powder,haldee powder aur namak dal ker ache tarhan mix karein aur 30 minutes kliya marinate ker lein. <br /> <br />Karhai mein oil aur pyaz dal ker ache tarhan mix ker lein. <br /> <br />Zeera,sabut kali mirch aur laung dal ker ache tarhan mix karein aur translucent hunay tak fry ker lein. <br /> <br />Marinated chicken dal ker ache tarhan mix karein aur 3 minutes kliya paka lein. <br /> <br />Podina dal ker ache tarhan mix karein aur dhak ker 2 minutes kliya paka lein phir tez ancch per pani sukh janay tak paka lein. <br /> <br />Boiled chawal shamil karein aur 2-3 minutes kliya ache tarhan mix karein aur serve karein.
