<br />BRAIN MASALA 1<br />INGREDIENTS:<br /><br />buffalo brain (maghaz ) 1 <br />oil 1/2 cup<br />onion 1 med fine chopped<br />tomato 1 large chopped<br />fresh coriander 1/4 cup<br />green chilies 2 chopped<br />ginger 1 inch sliced<br />yogurt 4 tbsp<br />dry feneugreek leaves 1 tsp<br />carom seeds 1 tsp<br />red chili pwd 1 tsp<br />B.pepper pwd 1/2 tsp<br />salt 1 tsp<br />turmeric 1/2 tsp<br />coriander pwd 1 tsp<br />cumin pwd 1 tsp<br />garam masala pwd 1/2 tsp<br />ginger garlic paste 1 tsp each<br />METHOD:<br />first slightly fry onion ,when the edges get fried add G.G paste and all spices.<br />mix and add 1/4 cup water to cook the spices properly.<br />when oil comes out on top add tomatoes with 1/2 cup water.<br />cover the lid and cook it on med low flame.<br />when tomatoes become a paste add brain and ginger sliced in it.<br />add 1/4 cup water mix and cover the lid.<br />cook it 10 minutes on low flame,brain will cooked in 10 minutes.<br />add feneugreek leaves and yogurt.<br />mix and cook on high flame.<br />when oil comes out on top add green chilies and squeeze 1/2 lemon on top.<br />sprinkle fresh coriander and simmer 2 mins.<br />serve with naan.
