Laura Pennington Freelance Writing Course <br />http://bit.ly/2HylRxm <br /> <br />http://valskitchenx.blogspot.ca/ <br /> <br />Thai Peanut Chicken Recipe With Grilled Thai Chicken Breasts W/ Chicken Satay Skewers <br /> <br />1/2 cup soy sauce <br />1/8 cup brown sugar <br />1 tsp garlic <br />1/8 tsp cayenne <br />chicken breasts -3 or 4 <br />1 1/2 cups rice <br />3 cups water <br />1 bunch leaf or romaine lettuce <br />1/4 cup brown sugar <br />3/4 cup sundried tomato and oregano dressing <br />1/8 tsp chili flakes <br />1 1/2 tbsp. peanut butter <br />1 tbsp soy sauce <br />1 tsp brown sugar <br />1/8 tsp. cumin <br />18 tsp cayenne <br />bamboo skewers <br />Combine first 4 ingredients in a container with a lid. <br />slice each chicken breast into about 4 slices and put into container with soy mixture. <br />stir and refrigerate a few hours. <br />Soak bamboo skewers in water. <br />Combine rice and water. cook in rice cooker or in pot on the stove <br />Rinse lettuce leaves and pat dry or spin. arrange on plates <br />Mix the brown sugar, dressing and chili flakes and set aside. <br />bbq or broil chicken strips after putting on skewers <br />When rice and chicken are ready put the rice on the lettuce, Top with the dressing mixture. <br />Put the chicken on top. Microwave the peanut butter for 25 seconds. Add the remaining ingredients and stir well. Spread on each piece of chicken if desired.
