Cheese Scones recipe<br /><br />Easy and delicious recipe for cheese scones: yummy snack that everyone will love! <br />Makes about 40 scones, depending on the size of cutter used.<br /><br />Ingredients:<br /><br />- 500g flour,<br />- 1 teaspoon salt,<br />(optional: large pinch of cayenne pepper),<br />- 150g finely grated cheese (+ some more for topping the scones)<br />- 250g butter,<br />- 2 full tablespoons of sour cream,<br />- 2 egg yolks,<br /><br />- 100ml milk,<br />- 1 teaspoon sugar,<br />- 25g fresh yeast.<br /><br />Note: Let all cold ingredients (milk, sour cream, fresh yeast, butter, eggs) warm up at room temperature for 2 hours before starting.<br /><br />Instructions:<br /><br />1. Mix 100ml lukewarm milk, 1 teaspoon sugar and sprinkle in 25g fresh yeast. Stirr and leave for 10-20 minutes until frothy.<br /><br />2. In a large bowl, mix 500g flour and 1 teaspoon salt, then rub the butter into it until it resembles homogene breadcrumbs.<br /><br />3. Mix in 150g finely grated cheese.<br /><br />4. Make a well in the centre of the mixture and add all remaining ingredients: 2 full tablespoons of sour cream, the risen/frothy milk-sugar-yeast mixture and 2 egg yolks.<br /><br />5. Gradually mix it together and knead gently.<br /><br />Note: Depending on the flour type/quality the dough might be too dry/hard. Just add some more sour cream if needed.<br /><br />6. The result should be a soft dough. Roll it into a ball when the dough becomes homogeneous and smoothish, cover and let it rest for 20 minutes in a warm place.<br /><br />7. Lightly flour a surface and gently roll out the dough then fold it 4 times.<br /><br />8. Again: cover and let it rest for 20 minutes in a warm place.<br /><br />9. Lightly flour a surface and gently roll out the dough then fold it 4 times again.<br /><br />10. And once more: cover and let it rest for 20 minutes in a warm place.<br /><br />11. Lightly flour a surface and gently roll out the dough to approximately 1.5 cm thickness: about “one finger thick”.<br /><br />12. Cut out the scones with a medium cutter (we use a handy plastic cup) and then place them on a baking tray lined with parchment paper.<br /><br />Note: Dip the cutter into flour if the dough sticks to it.<br />Note: Instead of parchment paper you can lightly grease the baking tray or just put the scones on a floured tray surface.<br /><br />Pat together the trimmings, re-roll the dough and stamp those out, too.<br /><br />13. Glaze the top of the scones with egg-sour cream mixture and sprinkle cheese on the top of each scone.<br /><br />14. Preheat the oven to 180-200 degree Celsius.<br /><br />15. Let them rest/rise for another 20 minutes in a warm place, covered with a tea towel, until slightly puffed up.<br /><br />16. Bake in the preheated oven for about 30 minutes until golden brown on top and cooked through.<br /><br />17.
