Chocolate Chip Pecan Blondies<br />Blondies... The original 'Brownie' before chocolate muscled in and took over. Here we do a version of a blondies recipe that features chocolate chips and pecans.<br /><br />Ingredients:<br />3/4 cup (1 1/2 sticks / 175g) butter<br />2 cups (500 mL / 360g) firmly packed brown sugar<br />2 eggs<br />1 Tbsp (15 mL) pure vanilla extract <br />2 cups (500 mL / 320g) all-purpose flour<br />2 tsp (10 mL) baking powder<br />1 tsp (5 mL / 7g) coarse salt<br />1 cup (250 mL / 180g) semi-sweet chocolate chips<br />1 cup (250 mL / 120g) chopped pecans <br /><br /><br /><br />Method:<br />Preheat oven to 350°F (180ºC). <br />Grease an 9x9" baking pan and line with a parchment paper sling. <br />Cream butter and brown sugar until light and fluffy. <br />Add eggs and vanilla; mix well. <br />Whisk together flour, baking powder and salt. <br />Mix in flour mixture. <br />Stir in chocolate chips and pecans. <br />Spread into prepared pan. <br />Bake 30 to 35 minutes or until cake tester inserted in centre comes out almost clean. <br />Cool in pan on wire rack. <br /> <br /><br />Serves: Makes 24 (1 bar) servings.
