Learn the recipe of Lemon Coriander Soup at home with Chef Ruchi Bharani on Rajshri Food.<br /><br />Lemon Coriander soup is a healthy soup recipe made with vegetable stock, lemon zest, mix vegetables and lots of coriander.<br />It is a flavourful soup recipe that you can slurp on a rainy day.<br />Do give it a try and share your feedback in the comments below.<br /><br />Ingredients:<br />For Stock<br />½ cup Cabbage, chopped<br />½ Carrot, chopped<br />1 Onion, chopped<br />1 Ginger, chopped<br />1 clove Garlic, chopped<br />6-7 French Beans, chopped<br />7-8 Bottle Gourd, pieces <br />Coriander leaves<br />1 Lemon, zest<br />5 cups Water<br /><br />For Soup<br />1 tsp Oil<br />3 tbsp Cabbage, chopped<br />3 tbsp Carrots, chopped<br />3 tbsp Corn<br />6-8 Spinach Leaves<br />Salt to taste<br />¼ Black Pepper<br />Juice of 1 Lime<br />Coriander Leaves, a handful<br /><br />Method of preparation:<br />For Stock<br />In a pot add cabbage, carrot, onion, ginger, garlic, french beans, bottle gourd, coriander, lemon zest, water and let it boil for 10-12 minutes. Strain the stock and keep it aside.<br /><br />For Soup<br />In the same saucepan heat oil, add cabbage, carrots, corn, give it a mix.<br />Add spinach leaves, cook the vegetables for 2 minutes, add the stock and let it boil for 2 minutes.<br />Season it with salt, pepper, squeeze in a lime, add coriander leaves, give it a mix.<br />Our Lemon Coriander Soup is ready to serve.
