Kashmiri dum Pulao - recipe in Urdu<br /><br />Ingredients:<br />750 gram Boiled Rice<br />750 gram Boiled Beef or raw chicken<br />5 Medium size Onions<br />1 Cup Oil<br />1 Cup Yogurt<br />1 tsp Salt<br />1 tsp Red Pepper<br />1 tsp Black Pepper<br />1 tbsp Grounded All Spices<br />1 tbsp Coriander Seeds<br />1 tbsp Whole all Spices<br />2 tbsp Ginger Garlic Paste<br />4 Green Chilies<br />1 tbsp Lemon Juice<br />Green Coriander<br />Mint leaves<br />1 pinch Food Colour Yellow<br />Few drops of Kewera Essence<br /><br /><br />Method:<br />1 - Add yogurt, coriander seeds, ginger garlic paste, salt, red pepper, black pepper, green chilies, coriander leaves, mint leaves & meat in a bowl. Mix well and marinate it for 30 minutes.<br />2 - Heat the oil in a big pan, add whole all spices and fry for a minute. Add Onions and fry till they are light brown. One onions are light brown and marinated beef and fry well for about 5 minutes. Add grounded all spices & lemon juice and fry for more 2 minutes.<br />Now add coriander leaves, mint leaves, green chilies and half cup water or beef stock. <br />Now add boiled rice, few drops of kewera essence & food color (mixed in water).<br />Put this on high flame for 5 minutes and then 10 minutes on low flame.<br />After 15 minutes, Kashmiri dum Pulao is ready.
