Hard boiled eggs are EVERYWHERE. How many weeks of sneaking them into the daily lunch box until they're all gone? Or... perhaps there's a better solution?<br /><br />You will need (for 6 servings):<br /><br />- 3 eggs<br />- 2 tbsp mayonnaise<br />- 1 tbsp ketchup<br />- 1 tbsp mustard<br />- salt and pepper<br />- ⅓ cup flour<br />- ⅔ cup bread crumbs<br />- oil for frying<br /><br />Here's how:<br /><br />1. Cut the hard boiled eggs in half lengthwise and set aside the yolks in a mixing bowl. <br /><br />2. Mix the yolks with mayonnaise, ketchup, and mustard until smooth and then season with salt and pepper. Spoon the mixture into a piping bag.<br /><br />3. While heating the oil, dip the egg whites in flour, beaten egg, and then breadcrumbs. When the oil is hot, fry the breaded egg whites until golden brown. <br /><br />4. When cooled slightly, pipe the yolk mixture into the indentation of the fried egg whites.
