A cheesy meat or vegetarian center surrounded by a roasted sweet pepper, all encased in a flaky, yet doughy crust — this is what dinner has been missing all these years.<br /><br />You'll Need:<br /><br />For the meat filling:<br /><br />- 8 oz ground meat<br />- 2 fl oz olive oil<br />- salt & pepper<br />- 2 tbsp corn<br />- 2 oz cooked rice<br />- 1 red onion<br />- 3 oz cheddar<br />- 1 tsp coriander<br /><br />For the couscous filling:<br /><br />- 10 fl oz vegetable broth<br />- 10 oz couscous<br />- 1 lemon (zest & juice)<br />- 5 oz feta cheese<br />- 1 tomato<br />- 1 tsp parsley<br />- 3 garlic cloves<br />- 2 fl oz oil<br /><br />Extra:<br /><br />- 2 puff pastry sheets<br />- 8 long red sweet peppers<br />- 2 eggs<br /><br />Here's How:<br /><br />1. Meat Stuffed Peppers in Puff Pastry<br /><br />1.1 Preheat the oven to 350°F. Heat the oil in a pan. Add the ground meat, season with salt and pepper, and fry it all together with the corn and cooked rice.<br /><br />1.2 Meanwhile, cut the onion and cheddar into small cubes, chop the coriander, add the ingredients to the pan, and fry well.<br /><br />1.3 Take the first sheet of puff pastry and cut 8 even strips.<br /><br />1.4 Wash 4 of the peppers, cut them lengthwise, and hollow them out.<br /><br />1.5 Spoon the cooled meat filling into the peppers.<br /><br />1.6 Wrap 1-2 puff pastry strips around each pepper.<br /><br />1.7 Whisk an egg and brush the egg wash over the puff pastry strips. Place the peppers on a sheet pan lines with parchment paper and cook for 20 minutes.<br /><br />* * * * *<br /><br />2. Couscous Stuffed Peppers in Puff Pastry<br /><br />2.1 Preheat the oven to 350°F. Cook the vegetable broth and couscous together in a covered pan until the couscous has absorbed the liquid.<br /><br />2.2 Add the lemon zest and lemon juice to the couscous and crumble the feta cheese on top.<br /><br />2.3 Cut the tomato into small cubes and chop the parsley and the garlic cloves.
