If you consider yourself a meat lover, then you're in for a real treat with this hearty inside-out chicken cordon bleu filled with stuffing and wrapped in pastry crust.<br /><br />You'll Need:<br /><br />For the pastry crust:<br /><br />- 7 oz flour<br />- 3½ oz cold butter, cut into cubes<br />- 1 pinch of salt<br />- 2 fl oz water<br /><br />For the herb stuffing:<br /><br />- 2 carrots, diced<br />- ½ yellow onion, diced<br />- 2 tbsp parsley, chopped<br />- 1 garlic clove, minced<br />- 1 pinch cayenne pepper<br />- 2 tsp olive oil<br /><br />For the roast chicken:<br /><br />- 3½ lb whole chicken<br />- 1 tsp salt<br />- 1 sprig rosemary<br />- 3 oz Swiss cheese slices<br />- 3 oz ham slices<br />- 1 egg yolk<br />- 2 tsp water<br /><br />For the sauce:<br /><br />- 3 oz carrots<br />- 2 oz onions<br />- 2 tbsp oil<br />- 3½ fl oz red wine<br />- 1 tbsp tomato paste<br />- 7 fl oz vegetable broth<br />- 1 tsp rosemary, chopped<br />- 1 garlic clove, chopped<br /><br />Here's How:<br /><br />1. Preheat the oven to 350°F. To prepare the pastry dough, add the butter and water to the flour, process into a smooth dough, and refrigerate for at least 2 hours. Then prepare the herb stuffing by combing the above ingredients.<br /><br />2. Season the entire chicken and cavity with salt and spoon the herb stuffing into the cavity. Tie the chicken legs together with kitchen twine.<br /><br />3. Dress the chicken with 4 slices of cheese and 4 slices of ham.<br /><br />4. Roll out the pastry dough, and wrap it around the chicken. Brush the dough with an egg wash and cook for 60 minutes.<br /><br />5. For the sauce, add the olive oil, carrots, and onions to a pan. Briefly sweat the vegetables with the chopped rosemary and garlic and then pour in the red wine.
